Gellan Gum Low Acyl is a jelly-like substance, obtained from red algae. Agar is a mixture of two components: the linear polysaccharide agarose, and a heterogeneous mixture of smaller molecules called agaropectin. It forms the supporting structure in the cell walls of certain species of algae, and is released on boiling. 

Gellan gum is a water-soluble anionic polysaccharide produced by Pseudomonas elodea, which is composed of a repeating unit of monomers, tetrasaccharide, that are two residues of D-glucose and one of each residues of D-glucuronic acid and L-rhamnose.
